Matt is one of a new generation of cooks using a modern approach to restaurant food that draws on the superb quality of British produce available today, but which also pays its respects to our amazing culinary heritage. His interpretation of Modern British Cuisine is to take a traditional dish and breathe new life into it with modern flavours and fresh presentation. Matt’s menus are packed with the best local, seasonal ingredients which are simply cooked to preserve the flavours and textures of those great ingredients. That being said, he is not afraid to draw on influences from Asian, Middle Eastern and Mediterranean cuisines, which are such a big part of the current food scene, in order to create exciting British dishes to impress the modern palate.
